INGREDIENTS
1 1/2 pounds of ground chuck
1/2 pound of country sausage
2 eggs
Can of beer (one cup)
1/4 cup chopped green bell pepper
2 tablespoons of garlic powder
1 red onion-sliced or chopped
1 teaspoon black pepper
1 teaspoon salt
2 slices bacon
A dozen soda crackers
1 tablespoon Italian seasoning
2 or 3 large potatoes
1/2 small package of baby carrots
1/4 cup Diamond J BBQ Sauce
1/4 cup yellow mustard
METHOD OF PREPARATION
Preheat overn to 375 degrees
Set aside carrots, potatoes, bacon and one tablespoon of the garlic powder. Combine the rest of the ingrediencts in a large bowl, starting with the ground chuck, breaking up as you place in bowl. Next, do the same with the sausage. Add 1/2 of the can of beer (about 1 cup) and the rest of the ingredients, crumbling the crackers in your hands. Mix all the ingredients together thoroughly. Form into a mound (you will have an oval when shaped to the pan) and place in the middle of a 9x13 inch pan, 2 1/2 inches deep. A glass baking dish works well.
Cut up the potatoes and place around the meat loaf. Follow with the whole baby carrots. Add the other cup of beer and approximately 1/2 cup of water to bring liquid within 1/2 inch from top of pan. Garnish top of meat loaf with a swirl of catsup and place the two bacon strips on top. Lastly, sprinkle remaining garlic powder over top of meatloaf. Cover the pan (foil works great, be sure to crimp edges around edges of pan).
Drink what is left of the beer (and another if you would like).
Bake at 375 degrees for one hour and twenty minutes, removing the cover the last 20 minutes of baking time.
Serves four to five persons wiht meatloaf left over for sandwiches.
